Healthy Pistachio Cake












Homie you can bake a cake, cake, cake...
Hey guysss. How amazing does this pistachio cake look?
And it tastes even better than it looks.
The best part: it's (pretty) healthy.
Definitely going to be making another one of these.

Healthy Pistachio Cake

Ingredients:
1 box white cake mix
2 1 oz boxes of Pistachio Jell-O pudding (sugar/fat free)
6 oz of plain Greek yogurt
4 egg whites
1 1/2 cups water
1 container of Cool Whip (thawed)
1 cup coconut milk
1/4 cup pistachios (for topping)

Directions: 1) preheat oven to 350 degrees 2) coat baking pan with butter or nonstick cooking spray 3) in a large bowl, mix cake mix, 1 of the pistachio pudding mix packages, egg whites, Greek yogurt, and water all together 4) pour mix into cake pan and bake for 35-40 minutes 5) to make frosting: in a medium bowl, mix the other pistachio pudding mix package and coconut milk 6) incorporate the thawed Cool Whip into frosting mixture; refrigerate until cake has completely cooled 7) chop up pistachios 8) when cake has cooled, top it with the pistachio Cool Whip frosting and sprinkle the chopped pistachios Enjoy!
